Pour l&rsquo;occasion, ce produit d&rsquo;exception se d\u00e9cline dans plusieurs recettes mais aussi dans diverses animations&#8230;<\/em><\/p>\n\n\n\n<p><strong><em>L&rsquo;Assaggio <\/em><\/strong>c&rsquo;est le <strong>restaurant gastronomique italien <\/strong>de l&rsquo;<strong><a href=\"https:\/\/collezione.starhotels.com\/fr\/nos-hotels\/castille\/\">h\u00f4tel de Castille<\/a><\/strong> dans le Ier arrondissement de <strong>Paris<\/strong>, rue de Cambon. Un h\u00f4tel 5 \u00e9toiles. A la t\u00eate de<em><strong> L&rsquo;Assaggio<\/strong><\/em>, le <strong>chef \u00e9toil\u00e9<\/strong> <strong>Ugo Alciati<\/strong>, consultant, qui cr\u00e9\u00e9 la carte (et ce depuis 2016), et le chef ex\u00e9cutif <strong>Sasha Arandjelovic<\/strong> qui a rejoint les cuisines du <a href=\"https:\/\/1jour1sortie.com\/index.php\/category\/gourmandises\/\"><strong>restaurant<\/strong><\/a> en 2017. Deux chefs originaires du <strong>Pi\u00e9mont<\/strong> et qui mettent leur terroir en valeur. <\/p>\n\n\n\n<p>La <strong>truffe blanche<\/strong> du <strong>Pi\u00e9mont <\/strong>est \u00e0 l&rsquo;honneur pendant un mois \u00e0 <em><strong>L&rsquo;Assaggio <\/strong><\/em>notamment via un<strong> menu d\u00e9gustation<\/strong> propos\u00e9 pendant un mois seulement. Car <strong>Ugo Alciati <\/strong>est \u00e9galement ambassadeur de la<strong> truffe blanche d&rsquo;Alba<\/strong>, disponible seulement d&rsquo;octobre \u00e0 d\u00e9cembre.<\/p>\n\n\n\n<p class=\"has-text-align-center\"><em><strong>Menu d\u00e9gustation &#8211; Menu diamant blanc en 5 s\u00e9quences <\/strong><\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><em>Amuse-bouche du chef <\/em>: cr\u00e8me de c\u00e8pes, pomme de terre et truffe.<br>L&rsquo;association pomme de terre et truffe fonctionne tr\u00e8s bien <\/li>\n\n\n\n<li><em>Antipasto<\/em> : \u0152uf poch\u00e9, velout\u00e9 de pommes de terre, cr\u00e8me de parmesan Reggiano \u201cVacche Rosse\u201d affin\u00e9 24 mois.<br>Ici la force du fromage, longuement affin\u00e9, vient contrebalancer la douceur de l\u2019\u0153uf et de la pomme de terre. La truffe apporte tr\u00e8s subtilement toute sa d\u00e9licatesse. <\/li>\n\n\n\n<li><em>Primo piatto &#8211; pasta :<\/em> Tagliolini \u201c40 jaunes d&rsquo;\u0153ufs\u201d.<br>La fameuse recette pi\u00e9montaise des p\u00e2tes aux 40 jaunes d\u2019\u0153uf &#8211; qui ne fonctionne qu&rsquo;avec une cuisson parfaite des p\u00e2tes, ce qui est le cas ici. Des p\u00e2tes \u00e0 la cr\u00e8me de truffe et \u00e0 la truffe, au dosage parfait.  Un plat de p\u00e2tes au top. <\/li>\n\n\n\n<li><em>Secondo piatto<\/em> : Joue de b\u0153uf (ou guanciale), pur\u00e9e, blettes fra\u00eeches et jus de cuisson \u00e0 la truffe<br>Une viande cuite tr\u00e8s longtemps dans son jus, \u00e0 la cannelle, au poivre vert frais toast\u00e9 et \u00e0 la truffe. La sauce qui accompagne ce plat, et qui en fait tout l&rsquo;int\u00e9r\u00eat, est pr\u00e9par\u00e9e quatre jours durant, cuite avec os, pour obtenir un bouillon puis un concentr\u00e9, de saveurs : de 10 litres au d\u00e9part il n&rsquo;en reste plus qu&rsquo;un \u00e0 la fin. <br>Ce plat de guanciale de b\u0153uf est le plat signature du chef et donc disponible \u00e0 la carte toute l&rsquo;ann\u00e9e.
