L’H\u00f4tel du Collectionneur, \u00e9tablissement 5 \u00e9toiles parisien, a recrut\u00e9 un nouveau chef pour ses cuisines, Filipe Da Assun\u00e7ao (MOF). Le cuisinier pr\u00e9sente sa premi\u00e8re cr\u00e9ation pour l’h\u00f4tel, \u00e0 l’occasion des f\u00eates de fin d’ann\u00e9e : sa b\u00fbche de No\u00ebl. <\/em><\/p>\n\n\n\n

L‘h\u00f4tel du Collectionneur<\/strong>, le plus grand h\u00f4tel 5 \u00e9toiles de Paris<\/strong>, dont aucune chambre ne mesure moins de 30 m\u00e8tres carr\u00e9, en cet hiver 2023 \/ 2024, a recrut\u00e9 un nouveau chef pour revoir son offre de restauration. C’est Filipe Da Assun\u00e7ao<\/strong>, Meilleur Ouvrier de France 1996, qui vient de prendre la t\u00eate des cuisines du Collectionneur. Ainsi, il vient d’ouvrir le restaurant et bar Le Collectionneur alors qu’il y a \u00e0 peine quelques mois en arri\u00e8re, l’h\u00f4tel du Collectionneur accueillait encore en location g\u00e9rance dans ses espaces le restaurant festif Salvaje<\/a>. <\/p>\n\n\n\n

J’avais d\u00e9couvert les talents culinaires du chef Filipe Da Assun\u00e7ao en 2019, alors qu’il officiait encore au palace Le Royal Monceau o\u00f9 il avait d\u00e9croch\u00e9 une \u00e9toile au restaurant Il Carpaccio. Filipe Da Assun\u00e7ao avait cr\u00e9\u00e9 un menu autour des l\u00e9gumes anciens<\/a> en accord mets et champagns pour la maison Ruinart qui y avait install\u00e9 une table \u00e9ph\u00e9m\u00e8re. Un menu qui, quatre ann\u00e9es plus tard, laisse encore un d\u00e9licieux souvenir. <\/p>\n\n\n\n

Filipe Da Assun\u00e7ao, outre la carte du nouveau restaurant Le Collectionneur, signe aussi la b\u00fbche de No\u00ebl de l’h\u00f4tel. Une b\u00fbche pour laquelle il a opt\u00e9 pour des saveurs rassurantes et consensuelles : la vanille et le chocolat.
