Le chef Juan Arbelaez<\/strong>, n\u00e9 \u00e0 Bogota, et candidat \u00e0 la troisi\u00e8me saison de Top Chef<\/em> en 2012, fait un pas de c\u00f4t\u00e9 par rapport \u00e0 ses origines colombiennes et se met \u00e0 la cuisine Nikkei<\/strong> (qui fusionne les saveurs du P\u00e9rou<\/strong> et du Japon<\/a><\/strong>). Le cuisinier <\/strong>signe plusieurs recettes \u00e9ph\u00e9m\u00e8res, le temps d’un d’une collaboration<\/strong> avec C\u00f4t\u00e9 Sushi<\/strong><\/a>, enseigne de street food<\/strong> sp\u00e9cialis\u00e9e dans la cuisine Nikkei<\/strong>. <\/p>\n\n\n\n

Juan Arbelaez <\/strong>a ainsi imagin\u00e9 6 recettes diff\u00e9rentes, disponibles chez C\u00f4t\u00e9 Sushi<\/strong> pour l’\u00e9t\u00e9, du 24 juin au 8 septembre 2025<\/strong>. Au menu, trois vari\u00e9t\u00e9s de rolls : le Sam’ Bazurto <\/em>(du nom du restaurant festif<\/a> du chef dans le VI\u00e8me arrondissement de Paris), avec truite crue, pickles, sauce terriyaki, piment aji panca et oignons frits ; le Samba Mango<\/em> avec s\u00e9riole marin\u00e9e aux agrumes, carottes, piment aji jaune et mangue et le Garden Chicken C\u00e9sar<\/em> avec poulet frit, avocat et laitue.
Malgr\u00e9 la pr\u00e9sence de piment, les deux premiers ne sont pas trop piquants car c’est vraiment bien dos\u00e9, et surtout tr\u00e8s frais gr\u00e2ce aux poissons. Le dernier, qui reprend les codes de la salade C\u00e9sar, avec une originale feuille de laitue pour pourtour, est \u00e0 privil\u00e9gier si on n’aime vraiment pas le poisson cru. <\/p>\n\n\n\n

Le cuisinier Juan Arbelaez<\/strong> a \u00e9galement cr\u00e9\u00e9 une recette de tacos<\/strong>. Croustillante, la galette renferme un tartare de s\u00e9riole, avec edamame, ma\u00efs, oignon rouge, coriandre, citron vert et sauce au fruit de la passion. La cr\u00e9ation la plus int\u00e9ressante de cette collaboration, rafraichissante, savoureuse et croquante.
Au menu aussi, un pok\u00e9 C\u00e9sar, m\u00e9lange entre le poke bowl et la salade C\u00e9sar dont la sauce C\u00e9sar est vraiment tr\u00e8s forte en jalapeno, ainsi qu’un mochi glac\u00e9 chocolat piment. <\/p>\n\n\n\n

R\u00e9cemment, elle avait fait appel \u00e0 Lilian Douchet, autre ex-candidat de Top Chef<\/em>. Ce n’est pas la seule enseigne \u00e0 avoir recours \u00e0 ce type de collaboration : Matsuri <\/a>propose actuellement des sando sign\u00e9s Homer Lobster. <\/p>\n\n\n\n
